Our goal with The Bulldog is to provide a coffee that is consistent in price, while tipping our hats to the roast profiles of days past. The Bulldog is roasted longer than any of our other coffees in order to mellow the acidity and produce a cup with very full body, and a deep, resonant flavour. Whenever we change the coffee component, we indicate the change with a new number designation.
Tasting Notes: Cocoa Nibs, Smoke, Demerara Sugar
Our goal with Catalogue is to provide a coffee which is consistent in both price and flavour profile. When prepared as an espresso, this coffee has a very clear flavour, and a clean finish. When prepared as a drip or filter coffee, it is very sweet and full-bodied, with a balanced acidity. Whenever we change the coffee component, we 'Catalogue' the change with a new number designation.
Tasting Notes: Walnut, Toasted Marshmallow, Undertones of Red Fruit
Nyabiraba Hill is one of several hills surrounding the Migoti Washing Station and is home to around 135 farmers with more than 15,000 coffee trees between them. The hill is roughly 30km from the washing station and rises 1,800 metres above sea level providing an unmatched view of the surrounding area. The word Nyabiraba means “place of seeing things.”
Tasting Notes: Blood Orange, Melon, Grapefruit
We approach this profile with the same goals as Catalogue, and seek small-lot decaf offerings that are well suited to the espresso profile. As decaffeinated green fades very quickly, we buy in small quantities, as needed. The Swiss Water® plant is just down the road in Burnaby, BC and uses fresh, local, water to gently remove the caffeine until the green reaches 99.9% decaffeination.
